Don’t let the name fool you: One look at the ingredients will show you that these Walnut Wheat Germ Bars pack all the sinful delight of a regular cookie, but in chewy bar form (yuuuuuummmm…). Thanks to my friend Andrea’s mom, Karen, for the recipe.

What You’ll Need:
1 1/4 cups all-purpose flour
1 1/2 cups cup packed light brown sugar
1/3 cup toasted wheat germ
1/2 cup butter (or vegetable oil)
2 eggs
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup coconut

What To Do:
Preheat oven to 350 degrees. Stir together 1 cup of the flour, 1/2 cup of the sugar, and all of the wheat germ. Cut in the butter until the mixture is the texture of coarse crumbs. Press into the bottom of an ungreased 13 x 9 x 2 baking pan. Bake for 8 minutes.

Meanwhile, beat together eggs and remaining cup of sugar. Mix remaining 1/4 cup of flour, the baking powder, and the salt. Stir into egg mixture. Mix in walnuts and coconut and carefully spoon over warm crust. Bake for 15 more minutes. Cut into bars and serve warm or cool.
