my mother’s ungodly good sweet potatos:
Cut up peeled sweets in any way you prefer. Put in large plastic bag with real butter, brown sugar & ginger. Again, if
Zabars has crystalized ginger (like tiny little grains) get that, otherwise you’ll be OK with regular ground ginger.
Refrigerate overnight, taking bag & shaking from time to time, as the butter & sugar melt into a sort of syrup.
Bake in oven (350) for about 45 minutes.
Quantities vary depending on how many potatoes you’re cooking. Use your judgment & don’t be afraid of the butter.
I promise you, these are AMAZING!
